Asperges met Bolzano-saus
De Bolzano-saus is een eenvoudige maar smakelijke klassieker uit de Zuid-Tiroler keuken. Hij bestaat uit weinig ingrediënten en de bereiding is geen hoogstandje. In Zuid-Tirol wordt Bolzano-saus meestal geserveerd met witte asperges.
Asperges met bolzano-saus is een gerecht dat in het voorjaar vaak wordt geserveerd in de asperge-restaurants in Terlano, maar ook in veel andere restaurants in het land. Wij onthullen ons recept voor een onvergetelijk aspergegenot thuis.

Ingrediënten:
- 15 speren witte asperges
- boter, zout
- 2 eetlepels witte wijn
Bolzano saus:
- 2 eieren
- 1 theelepel mosterd
- 150 ml olie
- 2 el hete vleessoep
- 1 el bieslook
- 2 el witte wijnazijn
- Zout en witte peper uit de molen
Bereiding:
Schil de asperges voorzichtig en snijd eventuele houtachtige, gedroogde uiteinden eraf. Breng gezouten water aan de kook, voeg boter en witte wijn toe, leg de asperges erin en kook ze, afgedekt, maximaal 20 minuten, afhankelijk van de dikte.
Kook voor de Bolzano-saus de eieren hard en spoel ze af met koud water. Scheid de dooiers van de eiwitten. Pureer de dooiers in een kom en meng goed met de mosterd en de vleesbouillon, roer vervolgens de olie erdoor, breng op smaak met peper en zout, roer de bieslook en het fijngehakte eiwit erdoor.
