Asperge strudel

Een bijzondere manier om Zuid-Tiroler asperges te bereiden is de aspergestrudel.

In het voorjaar, wanneer de asperges in Zuid-Tirol worden geoogst, kun je in de asperge-restaurants en vele andere herbergen in Zuid-Tirol genieten van allerlei asperge-lekkernijen. Hier presenteren we ons recept voor een heerlijke aspergestrudel.

Het recept

Ingrediënten voor 4 personen:

  • 300 g bladerdeeg of 400 g korstdeeg
  • 100 g ham (niet gerookt)
  • 200 g spinazieblaadjes
  • 100 g Emmentaler kaas
  • 400 g Terlano asperges, geschild en voorgekookt
  • 1 eierdooier voor coating

Bereiden:

Rol het deeg uit, leg achtereenvolgens de ham, kaas en spinazieblaadjes erop, leg de voorgekookte asperges in het midden, vouw de strudel dicht en bestrijk met eigeel.

Bak 10 tot 20 minuten in een voorverwarmde oven op hoog vuur (max. 250 °C) en serveer met hollandaisesaus.
